Southern Style Okra
Recipe type: Appetizer
Serves: 4 servings
  • 1 small sweet onion (3/4 cup/chopped) -- suggested JdR Torpedo or Cippilino.
  • 4 slices bacon, diced
  • 2 cups okra, rinsed, trimmed and cut in half (if long)
  • 3 medium tomatoes, shopped (or 1, 14 ounce can whole, peeled tomatoes WITH juice)
  • freshly ground pepper, to taste
  1. In saucepan or saute pan (with close fitting lid), saute the bacon and onion over medium heat until softened, not browned.
  2. Reduce the heat to low, and stir in the okra and tomatoes.
  3. Add salt to taste and the sugar.
  4. Cover and simmer for 15 minutes or until okra is tender.
  5. Remove from heat and stir in pepper.
