Carrot Cashew Soup

  • 1 teaspoon marjoram (so that's what that spice is good for!)
  • 1 teaspoon Spike (you can obviously season as you please!
  • 1 teaspoon basil
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 3 cups chopped carrots (I like the colorful ones from Jardin del Rio!)
  • 1.5 cups potatoes, peeled and cubed
  • 2 garlic cloves, peeled and chopped
  • ¾ cup diced onion (again, the sweet ones from JdR are nice!)
  • 1 tablespoon plus 1 teaspoon vegetable broth powder
  • 1.5 cups cashew
  1. Place all ingredients into large pot.
  2. Cover with water and cook until carrots and potatoes are tender.
  3. Using handblender (or immersion blender/wand blender), blend until soup reaches desired consistency. (If you like a "runnier" soup -- add more water.)
  4. **Warning from the creator of this recipe -- "This soup is VERY good! However, if you are not used to lots of roughage, you should NOT eat the entire pot in one sitting! ;)"
